italian Apple cake

This kind of cake is perfect in any season, but above all in autumn. Even if you can find now apples all of the year, it's in autumn that there is the harvest and they are at the peak in the fall.

  Indeed "Philips Fruit tuin"  garden in Eindhoven (  https://philipsfruittuin.nl/nl/ ) organizes each year some Harvest Sunday in September. And, it's a great moment to go with your children or grandchildren and to spend a day there, or just to escape from the busy life of the city.  Here i'm  harvesting some apples to make my italian apple cake.

So what you need to make my itlaian apple cake: of course apples! There are a loooot, i know. Choose the sweetest and delicious ones. I prefer the red ones! 

Ingredients (all room-temperature):

  • Apples: 5 big 
  • Butter: 250 gr 
  • Flour 00: 250 gr 
  • Sugar: 250 gr
  • Eggs: 5
  • Baking powder: 16 gr 
  • Cinnamon: 1 tsp (option)
  • Bastar sugar: 1 Tsp (topper, option)
  • Lemon juice

 

Instructions: Make the cake!

  • Start peeling all the apples, take away the seeds and the core. And cut them in thin slices. To avoid that they became black, put the lemon juice on them. 
  • Switch on the oven at 175ºC.
  • Then placethe butter in the mixer, and use the leaf whip leaf flat to beat it.
  • Add the sugar in the mixer and continue beating and mixing them. Maybe it's necessary to stop the mixer and move the butter a little bit to mix better with the sugar. 
  • After the butter and sugar is well mixed, add the eggs.
  • Then in a bowl, place the flour, baking powder and cinnamon. And when butter, sugar and eggs are very smooth, put the flour with the baking powder and cinnamon on it. 
  • Butter and flour a 26cm circle open baking pan.
  • Now pour in the cake batter, smooth the surface and put on top the apples-slides slice and gently press down.  You can create any kind of pattern you want. .
  • Put in the oven for 55minutes. Once baked, remove from the oven and let the cake cool down.
  • After it's cold, remove from the baking pan.
  • you can serve it with a vanilla ice cream or a whipped cream.
